Hellenic Cuisine Collection of Greek Recipes Mary Pyrros Karay

Published in 1957 by St. Helen's Philptochos Society and Sts. Constantine and Helen Parent and Teacher Association, Detroit, Michigan, this cookbook is a comprehensive collection of Greek dishes, both traditional and rare, robust and mild.

All contributors were members or friends of the Church and their collective background represent every province and island of Greece.

Over 300 recipes are contained in the cookbook, with simplified and "Americanized" instructions. There is also a glossary, translation of terms, kitchen hints, food equivalents and suggested menus. In addition, the religious significance of certain foods is also explained.

This cookbook shows it age and use. There is edgewear to the cover, and soiling and fading. Some of the plastic binding has separated from the covers, both front and back. The pages, for the most part are clean with few exceptions - there is tape residue on two pages, and on one page, there are recipe notes from the previous owner. Some pages have some light, small stains.

This is a rare, hard to find cookbook - and a great addition to the cooking library if one can overlook the wear.
